INGREDIENTS
4 oz Lean Ground Turkey
1 medium Sweet Potato
1/2 cup chopped Red Bell Pepper
1/4 cup chopped Yellow Onion
1 Large Egg
1 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
Peel and dice the sweet potato into small cubes. Dice the red bell pepper and chop the yellow onion.
Heat the olive oil in a nonstick skillet over medium heat. Add the sweet potato and onion, and sauté until they begin to soften, about 4-5 minutes.
Add the chopped red bell pepper to the skillet and continue to cook for another 2 minutes.
Push the vegetables aside and add the lean ground turkey to the skillet. Season with salt and pepper. Break the turkey into small bits and cook until it's well browned and cooked through, approximately 5-6 minutes.
In a separate small nonstick pan, cook the egg to your preference, frying until the edges are crispy but the yolk remains runny.
Combine the turkey with the sautéed vegetables to form a hearty hash. Plate the hash and place the crispy fried egg on top.
Season with additional salt and pepper if desired and serve immediately.
