5 oz Salmon Fillet (142g)
0.5 oz Shelled Pistachios (14g)
1 cup Asparagus (134g)
1 tsp Olive Oil (5g)
1/2 Lemon (15g juice & zest)
1/2 tsp Fresh Dill
1/2 tsp Garlic Powder
Salt & Black Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper.
In a small bowl, combine finely chopped pistachios, garlic powder, fresh dill, salt and black pepper.
Pat the salmon fillet dry and lightly brush the top with a small amount of olive oil and a squeeze of lemon juice.
Press the pistachio mixture onto the top of the salmon to form a crust.
Place the salmon fillet on one side of the prepared baking sheet.
On the other side of the sheet, arrange the asparagus. Drizzle with olive oil, add a splash of lemon juice, and season with salt and pepper.
Roast in the preheated oven for about 12-15 minutes or until the salmon is cooked through and the asparagus is tender.
Remove from the oven, garnish with a bit of extra lemon zest if desired, and serve immediately.
