INGREDIENTS
4 oz Lean Ground Beef
100g Extra Firm Tofu
1 cup Kale
1 tbsp Olive Oil
1 tsp Cornstarch
2 cloves Garlic
Salt and Pepper to taste
PREPARATION
Press the tofu for at least 15 minutes to remove excess moisture, then cut into bite-sized cubes.
Toss the tofu cubes lightly with cornstarch, a pinch of salt, and pepper to create a crispy coating.
Heat half of the olive oil in a large skillet over medium-high heat. Add the tofu cubes and cook until all sides turn golden and crispy, about 5-7 minutes. Remove and set aside.
In the same skillet, add the remaining olive oil, then sauté minced garlic for about 30 seconds until fragrant.
Add the lean ground beef to the skillet. Season with salt and pepper and cook until browned and cooked through, breaking it up as it cooks, about 5-6 minutes.
While the beef cooks, gently toss the kale with a little salt and pepper, and if desired, roast it separately in the oven at 375°F for 8-10 minutes until slightly crispy, or add it raw to the skillet for a softer texture.
Combine the crispy tofu and roasted (or sautéed) kale with the ground beef in the skillet. Stir together so the flavors meld for another 2 minutes.
Taste and adjust seasonings as needed. Serve warm and enjoy your protein-packed, savory skillet meal.
