INGREDIENTS
4 oz Chicken Breast
1 cup Whole Wheat Pasta (cooked)
1/4 cup Nonfat Greek Yogurt
1 tbsp Parmesan Cheese
1 tsp Olive Oil
1/2 cup Broccoli
1 clove Garlic
Pinch Black Pepper
Pinch Salt
PREPARATION
Cook the whole wheat pasta according to the package instructions until al dente, drain, and set aside.
Season the chicken breast with a pinch of salt and black pepper.
Heat the olive oil in a skillet over medium heat and add the chicken breast. Cook for about 5-6 minutes per side until fully cooked and golden brown. Remove from heat and slice into strips.
In the same skillet, add finely minced garlic and sauté for about 30 seconds until fragrant. Add the broccoli and lightly sauté for 2-3 minutes.
Lower the heat and stir in the nonfat Greek yogurt and Parmesan cheese. Mix well to form a creamy sauce. If needed, add a splash of water from the pasta to thin the sauce.
Combine the pasta, chicken strips, and broccoli with the creamy sauce. Toss gently until everything is evenly coated.
Season with additional salt and pepper to taste and serve immediately.
