INGREDIENTS
6 oz Ground Turkey (93% lean)
1 oz Low-Fat Mozzarella Cheese
1 medium Zucchini
1 tsp Olive Oil
2 tbsp Fresh Herbs (Parsley & Oregano)
1 tsp Garlic Powder
Salt and Black Pepper to taste
PREPARATION
Preheat your oven to 425°F.
In a medium bowl, gently mix the ground turkey with half of the fresh herbs, garlic powder, salt, and black pepper until just combined.
Divide the turkey mixture into two equal patties. Press a small indentation in the center of each patty and place the mozzarella cheese in the gap. Carefully mold the turkey around the cheese to form stuffed patties ensuring the cheese is fully enclosed.
Place the stuffed patties on a baking sheet lined with parchment paper.
Slice the zucchini into rounds or half-moons. Toss with olive oil, the remaining herbs, salt, and pepper.
Spread the zucchini evenly on a separate baking sheet.
Bake the turkey burgers in the preheated oven for 18-20 minutes until fully cooked and the internal temperature reaches 165°F. At the same time, roast the zucchini for 15-18 minutes until they are tender and slightly crispy around the edges.
Remove both from the oven, let the burgers rest for a few minutes, and serve alongside the crispy roasted zucchini.
