Enjoy a light yet satisfying dish featuring a perfectly seared salmon fillet paired with tender steamed asparagus and a creamy cauliflower mash. This meal offers delicate flavors with a gentle citrus note and a comforting texture that makes it both nutritious and delicious.
INGREDIENTS
6 oz Salmon Fillet
100g Fresh Asparagus
1 cup Cauliflower (107g)
1 Garlic Clove
1 Tbsp Lemon Juice
1/4 tsp Salt
1/4 tsp Black Pepper
PREPARATION
Preheat a nonstick skillet over medium-high heat. Pat the salmon dry with a paper towel.
Season the salmon fillet on both sides with salt and black pepper.
Add the salmon to the dry skillet skin-side down, searing for about 3-4 minutes. Flip and sear the other side for another 3 minutes or until cooked to your desired doneness.
Meanwhile, steam the asparagus in a steamer or in a covered pan with a little water for about 4-5 minutes until tender-crisp.
For the cauliflower mash, roughly chop the cauliflower and steam or boil until very tender (about 8-10 minutes). In a bowl, combine the cooked cauliflower with a crushed garlic clove and lemon juice, then mash until smooth. Season with a pinch of salt.
Plate the seared salmon alongside the steamed asparagus and a serving of cauliflower mash. Drizzle any remaining lemon juice over the salmon, and serve immediately.
