INGREDIENTS
4 oz Ground Turkey (93% Lean)
1 cup Brussels Sprouts
0.75 cup Cooked Quinoa
0.5 tsp Olive Oil
1 clove Garlic, minced
1 tbsp Mixed Fresh Herbs (Parsley, Thyme, Rosemary)
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C).
In a bowl, combine the ground turkey with minced garlic, chopped fresh herbs, salt, and pepper. Mix well and form into patties.
Place the turkey patties on a lightly greased baking sheet or skillet. Set aside.
Trim and halve the Brussels sprouts. Toss them with olive oil, salt, and pepper on a separate baking tray.
Place the Brussels sprouts in the preheated oven and roast for 20-25 minutes, stirring halfway through, until they are crisp and lightly caramelized.
While the sprouts roast, cook the turkey patties. You can either pan-sear them over medium heat for about 4-5 minutes on each side until fully cooked or bake them in the oven for 15-18 minutes until the internal temperature reaches 165°F.
Prepare the quinoa according to package instructions if it isn’t pre-cooked, or reheat your pre-cooked quinoa gently.
Plate the turkey patties alongside a serving of quinoa and the roasted Brussels sprouts, then garnish with extra fresh herbs if desired.
