INGREDIENTS
170g Ground Turkey (93% lean, cooked)
1 Bell Pepper (approx. 150g)
1/4 cup chopped Onion (approx. 40g)
1/2 medium Tomato (approx. 61g)
1 cup Spinach (approx. 30g)
1 teaspoon Olive Oil
1 garlic clove
Salt and Pepper to taste
1/2 teaspoon Italian Herbs
PREPARATION
Preheat your oven to 375°F.
Cut the top off the bell pepper, remove seeds and membranes. Set aside the pepper and its top if you want to use it as a garnish.
In a small pan, warm the olive oil over medium heat. Add the minced garlic and chopped onion, sauté until soft and fragrant.
Add the ground turkey to the pan and cook until lightly browned, breaking it apart as it cooks. Season with salt, pepper, and Italian herbs.
Stir in the diced tomato and spinach, cooking until the spinach is just wilted.
Spoon the turkey mixture into the hollowed bell pepper, filling it generously.
Place the stuffed pepper in a baking dish and cover with foil. Bake in the preheated oven for about 25-30 minutes, until the pepper is tender.
Remove the foil and bake for an additional 5 minutes for a slight crisp on top. Serve warm.
