INGREDIENTS
6 oz Chicken Breast
3 cups Fresh Spinach
1 tbsp Olive Oil
2 cloves Garlic, minced
1 tsp Fresh Thyme Leaves
1 tsp Fresh Rosemary, chopped
Salt & Black Pepper to taste
PREPARATION
Pat the chicken breast dry with paper towels and season both sides generously with salt, pepper, thyme, and rosemary.
Heat a non-stick skillet over medium-high heat and add olive oil.
When the oil is shimmering, add the chicken breast and sear for about 4-5 minutes on each side until golden brown and cooked through. Adjust cooking time if the breast is thicker or thinner.
Remove the chicken from the skillet and let it rest on a plate covered loosely with foil.
In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Be careful not to burn the garlic.
Add the fresh spinach to the skillet and toss gently in the infused olive oil and garlic. Sauté for about 2-3 minutes until the spinach has wilted but still retains its vibrant color.
Plate the chicken breast and spoon the sautéed spinach on the side. Serve immediately.
