Enjoy a delightful dinner featuring a perfectly seared salmon fillet served alongside tender steamed asparagus and a creamy cauliflower mash enriched with a touch of Greek yogurt and butter. This light yet satisfying dish balances fresh seafood with vibrant vegetables for a nutrient-packed meal.
INGREDIENTS
6 oz Salmon Fillet
6 Asparagus Spears
1 cup Cauliflower florets
2 tbsp Plain Nonfat Greek Yogurt
1 tsp Olive Oil
1 tsp Unsalted Butter
1 clove Garlic
Salt and Pepper to taste
PREPARATION
Season the salmon fillet with salt and pepper.
Heat a nonstick skillet over medium-high heat and add the olive oil. Once hot, place the salmon skin-side down and sear for about 3-4 minutes until a golden crust forms. Flip and cook for an additional 3-4 minutes until the salmon is just cooked through.
While the salmon cooks, trim the asparagus ends and steam them for about 4-5 minutes until tender but still crisp. Season lightly with salt and pepper.
For the cauliflower mash, steam the cauliflower florets along with a clove of garlic (minced) for about 8-10 minutes until very tender.
Transfer the steamed cauliflower and garlic to a blender or food processor. Add the Greek yogurt and butter, then blend until smooth. Season with salt and pepper to taste.
Plate the seared salmon fillet with the steamed asparagus on the side and a generous dollop of cauliflower mash. Enjoy this balanced and nutrient-rich meal while warm.
