INGREDIENTS
5 oz Fresh Spinach (141g)
4 oz Feta Cheese (113g)
2 Large Eggs
1 small Yellow Onion (50g)
2 Garlic Cloves
1/2 teaspoon Olive Oil
1 Phyllo Dough Sheet (28g)
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C) and lightly oil a small baking dish.
Rinse the spinach thoroughly. In a non-stick skillet over medium heat, add the olive oil and sauté the chopped onion and minced garlic until soft and fragrant.
Add the spinach to the skillet and cook until wilted, about 2-3 minutes. Season lightly with salt and pepper.
In a mixing bowl, beat the eggs and then stir in the crumbled feta cheese. Combine the sautéed spinach mixture and mix until evenly distributed.
Lay the phyllo dough sheet in the greased baking dish, pressing it along the bottom to form a light crust. Pour the spinach, egg, and feta mixture on top, smoothing it out evenly.
Bake in the preheated oven for 18-22 minutes or until the filling is set and the edges of the phyllo turn a crispy golden brown.
Remove from the oven, let cool for a few minutes, then slice and serve warm.
