A hearty and flavorful hash featuring lean ground beef, tender sweet potato, and a medley of bell pepper, onion, and spinach, brightened up with egg whites. This dish packs a satisfying punch of protein and vibrant flavors, perfect for any time of day.
INGREDIENTS
4 oz Lean Ground Beef (90% lean)
1 medium Sweet Potato
1 medium Red Bell Pepper
1/4 cup chopped Yellow Onion
1 cup Spinach
1 tsp Olive Oil
2 large Egg Whites
Salt, Pepper & Garlic Powder to taste
PREPARATION
Peel and dice the sweet potato into small cubes. Dice the red bell pepper and chop the onion.
Heat a non-stick pan over medium heat and add the olive oil.
Sauté the onion and red bell pepper until softened, about 3-4 minutes.
Add the diced sweet potato to the pan, season with a pinch of salt, pepper, and garlic powder, and cook for about 8-10 minutes until slightly tender.
Add the ground beef to the pan, breaking it up with a spatula. Cook until browned and cooked through, around 5-7 minutes.
Once the beef is cooked, stir in the spinach and let it wilt for about 1-2 minutes.
Push the hash to one side of the pan and pour in the egg whites. Allow them to cook gently, stirring occasionally, until softly scrambled and just set, then mix them into the hash.
Taste and adjust seasoning if needed, then serve warm.
