6 oz Salmon Fillet
1 bunch Asparagus (approx 200g)
1 tbsp Olive Oil
1 whole Lemon (juice & zest)
1 clove Garlic
1 tbsp Fresh Dill
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper and arrange the asparagus. Drizzle with olive oil, season with salt and pepper, and toss to coat evenly.
Place the salmon fillet on the baking sheet. Drizzle a little olive oil over the salmon, then squeeze the juice of half a lemon and sprinkle with salt and pepper.
Mince the garlic finely and chop the fresh dill. Mix them with a bit of lemon zest and spread the herb mixture over the top of the salmon.
Roast everything in the preheated oven for about 12-15 minutes, or until the salmon flakes easily with a fork and the asparagus is tender yet crisp.
