INGREDIENTS
7 oz Tilapia Fillet
1 medium New Potato
1 cup Fresh Spinach
1 tsp Olive Oil (for fish)
1 tsp Olive Oil (for potatoes)
2 sprigs Fresh Rosemary
2 sprigs Fresh Thyme
Salt & Pepper to taste
PREPARATION
Pat the tilapia fillet dry and season with salt and pepper.
Heat 1 teaspoon olive oil in a non-stick skillet over medium-high heat. Once hot, place the tilapia and sear for 3-4 minutes on each side until the fish is opaque and flakes easily.
Meanwhile, boil the new potato until tender, about 10-12 minutes. Drain and let cool slightly.
Lightly crush the boiled potato with the back of a fork, drizzle with 1 teaspoon olive oil, and toss in chopped rosemary and thyme, with a pinch of salt and pepper.
In a separate pot, steam the fresh spinach for 2-3 minutes until just wilted, preserving its vibrant color and nutrients.
Plate the seared tilapia alongside the herb-crushed potatoes and steamed spinach, garnishing with extra fresh herbs if desired.
