INGREDIENTS
6 oz Top Sirloin Steak
100g Baby Potatoes
100g Fresh Green Beans
2 cloves Garlic
2 tsp Extra Virgin Olive Oil
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F. In a bowl, toss the baby potatoes with 1 teaspoon olive oil, salt, and pepper. Spread them out on a baking sheet and roast for 20-25 minutes until crispy and tender.
While the potatoes roast, mince the garlic. Pat the steak dry with paper towels and season both sides generously with salt and pepper. Rub the minced garlic onto the steak.
Heat the remaining 1 teaspoon of olive oil in a heavy skillet over medium-high heat. Once the oil is shimmering, add the steak and sear for about 3-4 minutes per side for medium-rare, adjusting time as necessary to your preferred doneness.
In the final 5 minutes of the steak cooking, add the fresh green beans to the skillet (or separately steam/blanch them) and sauté until just tender, allowing them to pick up some of the garlic flavors.
Remove the steak from the pan and let it rest for a few minutes before slicing. Serve the sliced steak alongside the roasted potatoes and green beans.
