Enjoy a hearty and balanced dish combining lean steak with tender sweet potato, vibrant bell peppers, and a perfectly cooked egg on top. This savory hash features a medley of fresh vegetables and spices, creating a satisfying meal that works great for breakfast, lunch, or dinner.
INGREDIENTS
4 oz Lean Steak
1 medium Sweet Potato
1 large Egg
1/4 cup Red Bell Pepper
1/4 cup Yellow Onion
1 Garlic Clove
1 tsp Olive Oil
Salt and Pepper to taste
PREPARATION
Peel and dice the sweet potato into small cubes.
Dice the red bell pepper and yellow onion, and mince the garlic clove.
Season the lean steak with salt and pepper. In a large skillet over medium-high heat, add olive oil and sear the steak for about 2-3 minutes per side until browned but not fully cooked. Remove and slice into bite-sized strips.
In the same skillet, add the diced sweet potato and cook for 5-7 minutes, stirring occasionally. Then add the diced bell pepper, onion, and garlic. Continue to sauté until the vegetables are tender, about 4-5 minutes.
Return the steak strips to the skillet and mix with the vegetables. Create a small well in the center of the hash, crack an egg into the well, and cover the skillet. Allow the egg to cook until the white is set but the yolk remains runny, approximately 3-4 minutes. Alternatively, cook the egg separately if preferred.
Adjust seasoning with salt and pepper, then serve immediately.
