INGREDIENTS
5 oz Top Sirloin Steak (142g)
1 medium Red Potato (150g)
2 cloves Garlic
1 tbsp Unsalted Butter
1 tsp Olive Oil
2 sprigs Fresh Rosemary
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F for roasting the potatoes.
Wash the red potato, pat it dry, and cut it into small cubes. Toss the cubes with olive oil, a pinch of salt, pepper, and one sprig of rosemary.
Spread the seasoned potato cubes on a baking sheet and roast in the preheated oven for about 20-25 minutes, stirring halfway through, until crispy and golden.
While the potatoes are roasting, pat the steak dry with paper towels. Season generously with salt and pepper on both sides.
Heat a skillet over medium-high heat. Once hot, add the steak and sear for about 3-4 minutes on each side for medium-rare, or adjust cooking time to your preferred doneness.
In the last minute of cooking, add the butter, minced garlic (from 2 cloves), and the remaining rosemary sprig to the pan. Spoon the melted garlic butter over the steak as it finishes cooking.
Remove the steak from the skillet and let it rest for 5 minutes. Serve the steak sliced with the crispy roasted potatoes on the side.
