Paired with crisp roasted asparagus, this dish celebrates clean eating without sacrificing flavor.
INGREDIENTS
4 oz Chicken Breast (113g)
2 tbsp Almond Flour (14g)
2 tbsp Parmesan Cheese (10g)
1/4 cup Marinara Sauce (62g)
Approx. 6 spears Asparagus (90g)
1 tsp Olive Oil (4.5g)
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Season the chicken breast with salt and pepper on both sides.
Coat the chicken breast evenly with the almond flour, pressing lightly so it adheres.
Place the coated chicken on the prepared baking sheet and bake for 20-25 minutes, or until the chicken is cooked through and the coating is lightly crispy.
While the chicken bakes, trim the woody ends off the asparagus and toss them in a small bowl with olive oil, salt, and pepper.
Spread the asparagus on another baking sheet and roast in the oven for about 10-12 minutes, until tender yet crisp.
Once the chicken is cooked, remove it from the oven. Spoon the marinara sauce evenly over the top and sprinkle with Parmesan cheese.
Return the chicken to the oven for an additional 3-5 minutes, just to melt the cheese.
Plate the Chicken Parmesan alongside a serving of roasted asparagus and serve immediately.
