INGREDIENTS
6 oz Shrimp (approximately 170g)
1/8 cup Almond Slices (about 15g)
1 tsp Extra Virgin Olive Oil
1 garlic clove, minced
2 tbsp Fresh Parsley, chopped
1/2 Lemon (zest and juice)
Pinch of Red Pepper Flakes
Salt & Black Pepper to taste
PREPARATION
Pat the shrimp dry and season lightly with salt, black pepper, and red pepper flakes.
Heat the olive oil in a skillet over medium-high heat. Add the minced garlic and sauté briefly until fragrant, about 30 seconds.
Add the shrimp to the skillet, cooking them 2-3 minutes per side until they turn opaque and are just cooked through.
While the shrimp are cooking, toast the almond slices in a small dry pan over medium heat for 1-2 minutes until fragrant and lightly golden. Stir frequently to avoid burning.
Combine the toasted almonds with chopped fresh parsley and the zest and juice of half a lemon in a small bowl to create the gremolata.
Once the shrimp are done, plate them and generously spoon the almond gremolata over the top.
Serve immediately and enjoy the contrast of tender shrimp and crunchy, bright gremolata.
