Savor the bright, zesty flavors of lemon and fresh herbs complementing a perfectly pan-seared salmon paired with crispy roasted sweet potatoes. This dish combines the richness of salmon with a light, tangy finish and a satisfying side that’s both crisp and naturally sweet.
INGREDIENTS
5 oz Salmon Fillet
1/2 medium Sweet Potato
1 tsp Olive Oil
1/2 Lemon
2 tbsp Fresh Herbs (Parsley and Dill)
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F. Cut the sweet potato into bite-sized cubes, toss them with a drizzle of olive oil, salt, and pepper, and spread them out on a baking sheet.
Roast the sweet potato cubes in the oven for about 20-25 minutes until crispy on the edges and tender inside, stirring halfway through.
While the sweet potatoes are roasting, pat the salmon dry and season both sides with salt, pepper, and a sprinkle of fresh herbs.
Heat a non-stick skillet over medium-high heat. Once hot, add the salmon skin-side down if applicable, and sear for about 3-4 minutes until the crust is golden.
Flip the salmon and add the juice of 1/2 lemon to the pan, cooking for an additional 3-4 minutes until the salmon is just cooked through.
Plate the salmon alongside the roasted sweet potatoes, drizzle any remaining pan juices and a little extra lemon juice over the top, and garnish with additional fresh herbs if desired.
