PREPARATION
Preheat your oven to 400°F.
Wash the sweet potato thoroughly and pierce it with a fork. Place it on a baking sheet and roast in the oven for 35-40 minutes or until tender. Alternatively, you can cube the sweet potato, toss with half a teaspoon of olive oil, salt, and pepper, and roast on the sheet for 25-30 minutes.
While the sweet potato is roasting, heat the remaining olive oil in a non-stick skillet over medium heat.
