Crispy Sesame Tofu Stir-Fry with Fresh Vegetables
Enjoy a vibrant, crunchy stir-fry featuring crispy tofu enhanced with a light sesame glaze, edamame, and a colorful medley of fresh vegetables. This dish brings a delightful combination of savory soy, ginger, and garlic with a sprinkle of toasted sesame seeds that elevate every bite.
INGREDIENTS
250g Firm Tofu
1/2 cup Shelled Edamame
2 cups Mixed Vegetables
1 tbsp Sesame Seeds
1 tsp Sesame Oil
1 tbsp Low-Sodium Soy Sauce
2 cloves Garlic, minced
1 tsp Fresh Ginger, grated
PREPARATION
Press the tofu to remove excess moisture and cut it into bite-sized cubes.
In a bowl, gently toss the tofu cubes with a little soy sauce and a dusting of sesame seeds.
Heat the sesame oil in a non-stick skillet or wok over medium-high heat and add the tofu cubes. Cook until all sides turn golden and crispy, about 6-8 minutes. Remove tofu and set aside.
In the same skillet, add the minced garlic and grated ginger, stirring for about 30 seconds until fragrant.
Add the mixed vegetables and edamame to the skillet. Stir-fry for 3-4 minutes until they are just tender but still crisp.
Return the crispy tofu to the pan and drizzle with the remaining soy sauce. Toss everything together to combine flavors evenly.
Finish by sprinkling with additional sesame seeds if desired, and serve immediately.
