INGREDIENTS
8 oz Extra Firm Tofu (227g)
1 cup Broccoli (91g)
1/2 cup Red Bell Pepper (75g)
1/2 cup Shelled Edamame (78g)
1 tbsp Sesame Seeds (9g)
1 tsp Sesame Oil (5g)
1 tbsp Soy Sauce (16g)
1 clove Garlic (3g)
1 tsp Ginger (2g)
PREPARATION
Press the tofu to remove excess moisture by wrapping it in a clean towel for 15 minutes.
Cut the pressed tofu into 1-inch cubes. Lightly toss the tofu cubes with half of the sesame seeds, salt, and pepper if desired.
Heat a non-stick skillet over medium-high heat and add the sesame oil. Once hot, add the tofu and cook until golden and crispy on all sides, about 8-10 minutes.
Remove the tofu from the skillet and set aside. In the same skillet, add the minced garlic and grated ginger, and sauté for 1 minute until fragrant.
Add the broccoli and red bell pepper to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
Stir in the shelled edamame and soy sauce. Cook for an additional 2 minutes, allowing the flavors to combine.
Return the crispy tofu to the skillet and gently toss everything together. Sprinkle the remaining sesame seeds over the dish.
Serve immediately and enjoy your nutrient-packed, delicious stir-fry.
