PREPARATION
Preheat your oven to 425°F. Toss the chopped bell peppers, zucchini, and onion with olive oil, salt, and pepper. Spread the vegetables on a baking sheet in an even layer and roast for 15-20 minutes until tender and slightly caramelized.
While the vegetables are roasting, crack the eggs into a bowl, season with salt and pepper, and whisk until well combined.
