INGREDIENTS
6.5 oz Salmon Fillet
5 Asparagus Spears
1 medium Sweet Potato (approx 100g mashed)
1 tsp Olive Oil
Salt and Pepper (to taste)
PREPARATION
Pat the salmon dry and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat. Add the salmon, skin-side down if applicable, and sear for about 3-4 minutes. Flip and cook for another 3-4 minutes until the salmon is just cooked through.
Preheat your oven to 425°F. Toss the asparagus spears with olive oil, salt, and pepper, and spread them out on a baking sheet. Roast in the oven for about 10-12 minutes until tender and slightly charred.
Meanwhile, peel and cube the sweet potato. Boil the cubes in lightly salted water until very tender, about 10-12 minutes. Drain and mash with a fork or potato masher. Add a pinch of salt and pepper to taste.
Plate the salmon alongside a serving of the sweet potato mash and roasted asparagus. Serve immediately while warm.
