75g Sweet Potato, diced
1/3 cup Cooked Chickpeas (~50g)
50g Onion, chopped
1/2 cup Diced Tomatoes
2 cups Spinach
1 tsp Olive Oil
Spices (Cumin, Turmeric, Paprika, Salt, Pepper) to taste
2 cups Water or Vegetable Broth
PREPARATION
Rinse the dry red lentils under cold water and set aside.
Peel and dice the sweet potato into small cubes. Chop the onion and roughly chop the spinach.
In a medium pot, heat the olive oil over medium heat. Sauté the chopped onion until translucent.
Add the diced sweet potato and sauté for another 2 minutes.
Stir in the rinsed lentils, chickpeas, diced tomatoes, and your chosen spices (cumin, turmeric, paprika, salt, and pepper) to taste.
Pour in the water or vegetable broth and bring the mixture to a simmer.
