INGREDIENTS
150g Chicken Breast
1 cup Brussels Sprouts (about 88g)
1 Tbsp Olive Oil
1 Tbsp Balsamic Vinegar
1 tsp Honey
Salt (pinch)
Black Pepper (pinch)
PREPARATION
Preheat your oven to 425°F.
Trim the ends of the Brussels sprouts and cut them in half. Toss them with half the olive oil, salt, and black pepper on a baking sheet.
Roast the Brussels sprouts in the oven for about 20-25 minutes until crispy and caramelized, stirring halfway through.
While the sprouts roast, season the chicken breast with salt and black pepper.
Heat the remaining olive oil in a skillet over medium-high heat. Sear the chicken breast for 3-4 minutes on each side until a golden crust forms.
In a small bowl, mix the balsamic vinegar and honey. Pour this mixture over the chicken in the skillet and let it simmer for another 4-5 minutes, allowing the glaze to reduce and coat the chicken.
Ensure the chicken reaches an internal temperature of 165°F before removing from heat.
Plate the glazed chicken with the roasted Brussels sprouts, and drizzle any remaining glaze from the skillet over the top. Serve immediately.
