PREPARATION
Preheat your oven to 425°F (220°C) for roasting the green beans.
Pat dry the chicken thighs with a paper towel and season them generously with salt and pepper on both sides.
Heat half of the olive oil in a large, oven-safe skillet over medium-high heat. Once hot, add the chicken thighs. Sear for about 4-5 minutes on each side until golden and crispy.
While the chicken sears, trim and wash the green beans. In a bowl, toss them with the remaining olive oil, a pinch of salt, and pepper.
