Enjoy a perfectly roasted pork tenderloin bathed in a tantalizing sweet and savory glaze, paired with crispy, olive oil-drizzled broccoli. This dish offers a balance of hearty protein and vibrant veggies for a flavorful, nourishing meal.
INGREDIENTS
6 oz Pork Tenderloin (~170g)
1 cup Broccoli (91g)
2 tsp Extra Virgin Olive Oil
1 tsp Honey
1 tsp Low Sodium Soy Sauce
1 tsp Dijon Mustard
1 clove Garlic
Salt & Pepper to taste
PREPARATION
Preheat the oven to 425°F (220°C).
Pat the pork tenderloin dry with paper towels and season generously with salt and pepper.
In a small bowl, mix the honey, low sodium soy sauce, Dijon mustard, and minced garlic to create the glaze.
Heat a skillet over medium-high heat and sear the pork tenderloin on all sides for about 2-3 minutes per side until browned.
Transfer the seared tenderloin to a baking sheet. Brush the pork with half of the glaze, reserving the other half for later.
Roast the pork in the oven for 15-18 minutes, or until the internal temperature reaches 145°F (63°C).
While the pork roasts, toss the broccoli with olive oil, salt, and pepper. Spread it on a separate baking sheet.
Place the broccoli in the oven during the last 10 minutes of the pork's cooking time, stirring halfway through, until crisp-tender and slightly charred.
After removing the pork from the oven, allow it to rest for 5 minutes before slicing. Drizzle with the remaining glaze.
Serve slices of the tenderloin alongside the crispy broccoli for a balanced, flavorful meal.
