INGREDIENTS
6 oz Salmon Fillet
1 cup Green Beans
150g Cauliflower
1 tsp Olive Oil (for green beans)
1 tsp Olive Oil (for mash)
2 cloves Garlic
Salt & Pepper to taste
PREPARATION
Pat the salmon fillet dry and season generously with salt and pepper.
Heat a non-stick skillet over medium-high heat and add a drizzle of olive oil.
Place the salmon in the skillet, skin side down if applicable, and sear for about 3-4 minutes; then flip and cook for an additional 3-4 minutes until the salmon is just cooked through.
Meanwhile, steam or boil the cauliflower until very tender, about 10 minutes.
In a separate pan, sauté the green beans with a teaspoon of olive oil and minced garlic for 3-4 minutes until crisp-tender.
Drain the cauliflower and mash it with the second teaspoon of olive oil, adding salt and pepper to taste for a creamy texture.
Plate the seared salmon alongside a serving of garlic green beans and a generous scoop of cauliflower mash, and serve immediately.
