1 cup Asparagus (134g)
1 tbsp Extra Virgin Olive Oil (14g)
1 Lemon
2 cloves Garlic
Pinch of Salt
Pinch of Black Pepper
PREPARATION
Rinse and pat dry the prawns. Peel and devein if necessary.
Trim the tough ends off the asparagus and toss them in half of the olive oil, salt, and pepper.
Preheat your oven to 400°F (200°C) for roasting the asparagus. Spread asparagus on a baking sheet and roast for about 12-15 minutes until tender.
While the asparagus is roasting, zest and juice the lemon. Mince the garlic cloves.
Heat the remaining olive oil in a large skillet over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
Add the prawns to the skillet, season with a pinch of salt and pepper, and cook for about 2-3 minutes per side until they turn pink and are just cooked through.
