Seared Salmon with Garlic Green Beans and Cauliflower Mash
Enjoy a beautifully seared salmon paired with garlicky crisp green beans and a creamy cauliflower mash enhanced with a touch of Greek yogurt. This dish balances delicate seafood flavors with satisfying, vibrant vegetable sides, finished with a drizzle of olive oil for added richness.
INGREDIENTS
5 oz Salmon Fillet
1 cup Green Beans
1 cup Cauliflower (mashed)
1/4 cup Plain Nonfat Greek Yogurt
2 tsp Olive Oil
2 cloves Garlic
Salt and Pepper to taste
PREPARATION
Pat the salmon fillet dry and season with salt and pepper.
Heat a non-stick skillet over medium-high heat with 1 tsp of olive oil. Once hot, add the salmon skin-side down and sear for about 3-4 minutes. Flip and sear the other side for another 3-4 minutes until cooked to your liking.
In a separate pan, heat the remaining 1 tsp olive oil over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant.
Add the green beans to the garlic oil and stir-fry for about 4-5 minutes until they are tender-crisp. Season with a pinch of salt and pepper.
Steam or boil the cauliflower florets until very tender. Drain well and mash using a fork or potato masher.
Once mashed, stir in the Greek yogurt and season with salt and pepper to taste to achieve a creamy consistency.
Plate the seared salmon alongside a serving of garlic green beans and a generous scoop of cauliflower mash. Serve warm.
