INGREDIENTS
2 x 100g portions Boneless Skinless Chicken Thighs
1 cup Broccoli
1 teaspoon Olive Oil
1 tablespoon Lemon Juice
1 teaspoon Fresh Rosemary
1 teaspoon Fresh Thyme
1 teaspoon Garlic Powder
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F (220°C).
In a small bowl, combine olive oil, lemon juice, fresh rosemary, fresh thyme, garlic powder, salt, and pepper to create the marinade.
Place the chicken thighs in a bowl or ziplock bag and pour the marinade over them. Ensure the thighs are evenly coated. Marinate for at least 15 minutes (or up to 1 hour in the refrigerator for more flavor).
On a baking sheet, arrange the marinated chicken thighs and add the broccoli florets around them. Drizzle a little extra olive oil over the broccoli and season with a pinch of salt and pepper.
Roast in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F) and the broccoli is crispy on the edges.
Remove from the oven and let rest for 5 minutes before serving.
