INGREDIENTS
3 cups diced Ripe Tomatoes
1 cup loosely packed Fresh Basil Leaves
1 cup White Beans (Cannellini)
1/2 cup Nonfat Greek Yogurt
2 tbsp Nutritional Yeast
1 medium Yellow Onion
2 Garlic Cloves
1 tsp Extra Virgin Olive Oil
Salt & Pepper to taste
PREPARATION
Heat the olive oil in a large saucepan over medium heat.
Add the diced onion and minced garlic, sautéing until the onion becomes translucent.
Add the diced tomatoes and cook for about 5 minutes until they start to break down.
Pour in the white beans and add about 1 cup of water (or vegetable broth for extra flavor). Bring to a simmer.
Stir in the fresh basil leaves and simmer for another 5 minutes to meld the flavors.
Remove the soup from heat and let it cool slightly, then blend until smooth using an immersion blender or countertop blender.
Return the blended soup to low heat. Stir in the nonfat Greek yogurt and nutritional yeast until fully incorporated. Warm gently without boiling.
Season with salt and pepper to taste, then serve warm.
