INGREDIENTS
6 oz Chicken Breast
1.5 cups Brussels Sprouts
2 tsp Olive Oil
1 tbsp Lemon Juice
1 clove Garlic
2 sprigs Fresh Thyme
Sea Salt & Black Pepper to taste
PREPARATION
Preheat your oven to 425°F (220°C).
In a small bowl, combine the lemon juice, minced garlic, chopped thyme leaves from one sprig, and a pinch of salt and pepper.
Place the chicken breast in a shallow dish and pour half of the lemon-herb mixture over it, ensuring it is well coated. Let it marinate for at least 15 minutes.
While the chicken marinates, trim and halve the Brussels sprouts. Toss them in olive oil and the remaining lemon-herb mixture along with a bit more salt and pepper.
Arrange the chicken and Brussels sprouts on a baking sheet in a single layer.
Roast in the preheated oven for about 20-25 minutes, or until the chicken is cooked through (internal temperature reaches 165°F) and the Brussels sprouts are golden and crispy.
Remove from oven, let the chicken rest for 5 minutes, then serve the roasted chicken alongside the crispy Brussels sprouts.
