Seared Salmon with Steamed Asparagus and Cauliflower Mash
Enjoy a plate of perfectly seared salmon paired with tender steamed asparagus and a creamy cauliflower mash. The salmon is pan-seared to achieve a light crisp on the outside while keeping the fish moist and flaky inside. The delicate asparagus and velvety mash make for a harmonious blend of textures and flavors.
INGREDIENTS
6 oz Salmon Fillet
6 spears Asparagus
1 cup Cauliflower
1/4 cup Unsweetened Almond Milk
2 tsp Olive Oil
1 clove Garlic
Pinch of Salt
Pinch of Black Pepper
2 sprigs Fresh Dill
PREPARATION
Pat the salmon dry and season both sides with a pinch of salt and black pepper.
In a non-stick skillet, heat 1 tsp of olive oil over medium-high heat. Once hot, place the salmon skin-side down and sear for about 3-4 minutes. Flip and cook the other side for an additional 3-4 minutes until the salmon is just cooked through.
Meanwhile, trim the woody ends off the asparagus. Steam the asparagus for about 4-5 minutes until bright green and tender-crisp.
Break the cauliflower into florets and steam until tender, around 8-10 minutes. Once tender, transfer to a blender or use a potato masher.
Add the unsweetened almond milk, remaining 1 tsp olive oil, and the minced garlic to the cauliflower. Blend or mash until smooth and creamy. Season with a pinch of salt and pepper to taste.
Plate the seared salmon alongside the steamed asparagus and a generous serving of cauliflower mash. Garnish the salmon with fresh dill sprigs and serve immediately.
