INGREDIENTS
5 oz Chicken Breast
1/4 cup Buttermilk
1/4 cup Whole Wheat Breadcrumbs
1 cup Green Beans
1 tsp Olive Oil
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F (220°C) and line a baking tray with parchment paper.
In a bowl, add the buttermilk along with a pinch of salt and pepper. Submerge the chicken breast in the buttermilk, ensuring it’s well coated. Allow to marinate for at least 30 minutes.
In another shallow dish, spread the whole wheat breadcrumbs. Remove the chicken from the buttermilk, letting excess drip off, and press it into the breadcrumbs until evenly coated on all sides.
Place the coated chicken breast on the prepared baking tray. Drizzle a teaspoon of olive oil over the chicken and season lightly with additional salt and pepper if desired.
On a separate part of the tray, spread the green beans and toss them with a little olive oil, salt, and pepper.
Place the tray in the oven and bake for 20-25 minutes, or until the chicken is cooked through and the outside is crispy, and the green beans are tender with slight browning.
Remove from the oven and let rest for a couple of minutes before serving.
