INGREDIENTS
5 oz Chicken Breast (~142g)
1/4 cup Panko Breadcrumbs (~20g)
1 large Egg White (~33g)
1 tbsp Cornstarch (~8g)
1/2 cup Pineapple Chunks (~82g)
1/2 cup Red Bell Pepper (~75g)
2 tbsp Homemade Sweet & Sour Sauce (~30g)
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Slice the chicken breast into bite-sized pieces.
In a bowl, whisk together the egg white and add the chicken pieces to coat them lightly.
In a separate shallow dish, combine panko breadcrumbs and cornstarch. Dredge the chicken pieces in this dry mixture until evenly coated.
Place the coated chicken pieces on the prepared baking sheet and lightly spray or drizzle with a minimal amount of oil.
Bake for 15-18 minutes, flipping halfway through to ensure even crisping.
While the chicken is baking, prepare the sauce by gently warming the homemade sweet and sour sauce with pineapple chunks and sliced red bell pepper in a small saucepan for 3-4 minutes.
Once the chicken is crispy and fully cooked, toss it with the warm sauce mixture or serve the sauce on the side for dipping.
Plate and enjoy your Crispy Baked Sweet & Sour Chicken while hot.
