INGREDIENTS
5 oz Ground Turkey (93% Lean)
1 small Sweet Potato
1 cup chopped Kale
1 large Egg White
1/2 medium Red Bell Pepper
1/4 small Onion, diced
1 clove Garlic
1 teaspoon Olive Oil
1 teaspoon Smoked Paprika
Salt & Pepper to taste
PREPARATION
Preheat a large skillet over medium heat.
Peel and dice the sweet potato into small cubes. Dice the red bell pepper and onion, and mince the garlic.
Add the ground turkey to the skillet, sprinkle with smoked paprika, salt, and pepper, and cook until it's browned and crumbled, about 5-7 minutes.
Add the diced sweet potato, red bell pepper, and onion to the skillet. Stir and cook for another 5 minutes or until the sweet potato starts to soften.
Lightly beat the egg white and stir it into the hash, allowing it to cook through and bind the mix slightly.
In a separate pan, heat the olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Add the chopped kale and season with a pinch of salt, stirring until the kale wilts, approximately 2-3 minutes.
Combine the sautéed kale with the hash or serve it on the side. Adjust seasoning as needed and serve warm.
