INGREDIENTS
275g Extra Firm Tofu
1/2 cup Shelled Edamame (cooked)
1 cup Mixed Vegetables (broccoli, bell pepper, carrots)
2 tbsp Unsalted Cashews
1 tsp Sesame Oil
1 tbsp Low-Sodium Soy Sauce
1 clove Garlic
1/2 tsp Fresh Ginger, grated
1 tsp Sesame Seeds
PREPARATION
Press and drain the extra firm tofu to remove excess moisture, then cut it into bite-sized cubes.
In a bowl, gently toss the tofu cubes with a drizzle of sesame oil and a pinch of salt. For extra crispiness, let the tofu sit for 10 minutes.
Heat a non-stick pan over medium-high heat. Add the tofu cubes and stir-fry until they are golden and crisp on all sides, about 7-10 minutes. Remove and set aside.
In the same pan, add a little more sesame oil if needed. Sauté the minced garlic and grated ginger until fragrant, about 30 seconds.
Add the mixed vegetables and stir-fry for 3-4 minutes until they begin to soften while still retaining a crunch.
Stir in the cooked edamame and return the crispy tofu to the pan. Drizzle with low-sodium soy sauce and toss gently to coat all the ingredients evenly.
Top with unsalted cashews and sprinkle sesame seeds over the stir-fry for added texture and flavor.
Serve immediately and enjoy this balanced, protein-packed meal.
