INGREDIENTS
6 oz Salmon Fillet
1 cup Green Beans
1 tbsp Olive Oil (for green beans)
1 tsp Olive Oil (for salmon)
1/2 Lemon
2 cloves Garlic
Pinch of Salt
Pinch of Black Pepper
PREPARATION
Preheat your oven to 425°F (220°C) for the green beans.
Rinse and trim the green beans, then toss them in 1 tablespoon of olive oil, salt, and pepper. Spread on a baking sheet in a single layer.
Roast the green beans in the oven for about 12-15 minutes until tender and slightly crispy, stirring halfway through.
While the green beans roast, pat the salmon fillet dry with a paper towel and brush lightly with 1 teaspoon olive oil. Season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat. Once hot, place the salmon fillet skin-side down (if applicable) and sear for about 4 minutes until the skin is crispy.
Flip the salmon carefully and cook for another 3-4 minutes until the salmon is just cooked through.
In a small bowl, combine the juice of 1/2 lemon and minced garlic. Drizzle this mixture over the roasted green beans as soon as they come out of the oven.
Plate the salmon alongside the lemon-garlic roasted green beans and serve immediately.
