INGREDIENTS
1 block (120g) Tempeh
1/2 cup shelled Edamame (75g)
1 cup chopped Broccoli (91g)
1 medium Bell Pepper (119g)
1 medium Carrot (61g)
1/2 cup Snap Peas (50g)
1 tbsp Maple Syrup
1 tbsp Soy Sauce
2 cloves Garlic
1 tsp Ginger
1 tsp Sesame Oil
PREPARATION
Press the tempeh for 10 minutes to remove excess moisture, then cut into bite-sized cubes.
In a small bowl, whisk together maple syrup, soy sauce, minced garlic, and grated ginger.
Toss the tempeh cubes in half of the glaze mixture and let marinate for 10 minutes.
Heat sesame oil in a non-stick skillet over medium-high heat. Add the marinated tempeh and cook until crispy and golden on all sides, about 6-8 minutes.
Remove the tempeh and set aside. In the same skillet, add the broccoli, bell pepper, carrot, and snap peas. Stir-fry for 4-5 minutes until vegetables are tender-crisp.
Return the crispy tempeh to the pan and drizzle the remaining glaze over the mixture. Toss gently to combine.
Serve immediately and enjoy this nutritious, flavorful stir-fry.
