INGREDIENTS
5 oz Salmon Fillet
1 cup Green Beans
1 cup Cauliflower
3 tbsp Non-Fat Greek Yogurt
1 tsp Olive Oil
1 Garlic Clove
Salt and Pepper (to taste)
PREPARATION
Pat the salmon fillet dry and season with salt and pepper on both sides.
Heat a non-stick skillet over medium-high heat and add the olive oil.
Place the salmon skin-side down in the skillet and sear for about 3-4 minutes until a golden crust forms, then flip and cook for another 3-4 minutes until done to your liking.
While the salmon cooks, steam the green beans until they are crisp-tender, about 4-5 minutes.
In a separate pot, steam the cauliflower florets until soft, about 8-10 minutes.
Once the cauliflower is tender, transfer it to a bowl and blend it with the non-fat Greek yogurt, a crushed garlic clove, salt, and pepper until creamy and smooth.
Toss the steamed green beans with a little extra salt, pepper, and minced garlic if desired.
Plate the seared salmon alongside a serving of garlic green beans and a generous scoop of cauliflower mash.
