Enjoy a balanced dinner featuring a perfectly seared 6-ounce salmon fillet paired with nutrient-packed steamed asparagus and a creamy sweet potato mash. The dish bursts with flavors from a light lemon seasoning and fresh herbs, offering a wholesome and satisfying meal.
INGREDIENTS
6 oz Salmon Fillet (≈170g)
1/2 medium Sweet Potato (≈100g)
1 cup Asparagus (≈134g)
1/4 Lemon
1 teaspoon Olive Oil
Salt and Pepper to taste
PREPARATION
Pat the salmon dry and season both sides with salt and pepper.
Heat 1 teaspoon of olive oil in a non-stick skillet over medium-high heat. Once hot, add the salmon fillet skin-side down (if applicable) and sear for about 3-4 minutes per side until cooked through and golden.
While the salmon cooks, peel and cube the sweet potato. Boil or steam the cubes until tender, then mash them with a fork or potato masher. Season with a pinch of salt and a squeeze of lemon juice.
Trim the asparagus and steam it for around 4-5 minutes until tender yet crisp.
Plate the salmon alongside a serving of sweet potato mash and steamed asparagus. Finish with a light drizzle of fresh lemon juice over the salmon for a bright finish.
