INGREDIENTS
1 medium Russet Potato (150g)
1/2 cup Nonfat Greek Yogurt (120g)
1 cup Low-Sodium Chicken Broth (240g)
1/2 cup Skim Milk (120g)
2 slices Turkey Bacon (28g total)
1/4 cup Reduced-Fat Cheddar Cheese (28g)
1 medium Onion (110g)
2 cloves Garlic
2 tbsp Fresh Chives
Salt & Pepper to taste
PREPARATION
Preheat a medium pot over medium heat. Dice the onion and mince the garlic.
Add the diced onion and garlic to the pot with a splash of water or a light spray of cooking oil. Sauté until the onion is translucent, about 3-4 minutes.
Peel and dice the potato into small cubes. Add the potato cubes to the pot along with the low-sodium chicken broth.
Bring the mixture to a simmer and cook until the potatoes are tender, approximately 15 minutes.
While the potatoes are cooking, cook the turkey bacon in a pan until crisp. Once cooled, crumble the bacon into smaller pieces.
Once the potatoes are soft, reduce the heat to low and stir in the skim milk and nonfat Greek yogurt until smooth and creamy. Season with salt and pepper to taste.
Remove the soup from heat and ladle into serving bowls. Top each bowl with crumbled turkey bacon, a sprinkle of reduced-fat cheddar cheese, and fresh chives.
Serve warm and enjoy your healthy loaded baked potato soup.
