INGREDIENTS
7 oz Salmon Fillet
1 medium Sweet Potato
1 cup Green Beans
1 tbsp Olive Oil
2 cloves Garlic
Salt and Pepper to taste
PREPARATION
Preheat a skillet over medium-high heat and add half of the olive oil.
Season the salmon fillet with salt and pepper on both sides.
Place the salmon in the skillet, skin-side down if applicable, and sear for about 3-4 minutes on each side until a crispy crust forms and the fish is cooked to your desired doneness.
While the salmon cooks, peel and cube the sweet potato and steam or boil until tender for about 10-12 minutes.
Mash the cooked sweet potato with the remaining olive oil, adding a pinch of salt and pepper for flavor.
In a separate pan, heat a teaspoon of olive oil and add minced garlic. Sauté briefly until fragrant, then toss in the green beans. Sauté for 4-5 minutes until they are tender yet still crisp.
Plate the seared salmon alongside a serving of sweet potato mash and garlic green beans. Serve immediately.
