INGREDIENTS
6 oz Salmon Fillet
1 cup Green Beans
1 cup Cauliflower
1 tsp Olive Oil
1 clove Garlic
Salt & Pepper to taste
PREPARATION
Preheat the oven to 425°F.
Toss the cauliflower florets with olive oil, salt, and pepper and spread them on a baking sheet. Roast in the oven for 20-25 minutes until tender and slightly caramelized.
While the cauliflower roasts, steam or boil the green beans until just tender (about 4-5 minutes), then drain.
Heat a non-stick skillet over medium-high heat. Season the salmon fillet with salt and pepper.
Sear the salmon, skin side down if applicable, for about 3-4 minutes until a golden crust forms, then flip and cook for another 3-4 minutes until the salmon is just cooked through in the center.
In the same skillet, add a little water if needed and toss in the minced garlic. Sauté briefly until fragrant, then add the steamed green beans to coat them in the garlic flavor. Cook for an additional minute.
Plate the seared salmon with a side of garlic green beans and roasted cauliflower. Serve immediately.
