1/4 cup Light Coconut Milk (60g)
1 tsp Coconut Oil
1 tsp Extra Virgin Coconut Oil
1/2 medium Red Bell Pepper
1/2 medium Zucchini
1 cup Fresh Spinach
1/4 cup Fresh Basil Leaves
1 clove Garlic
PREPARATION
Pat dry the chicken breast and season lightly with salt and pepper.
Heat 1 tsp of coconut oil in a skillet over medium-high heat. Sear the chicken breast for about 3-4 minutes on each side until golden brown.
Remove the chicken from the skillet and set aside. In the same skillet, add the extra virgin coconut oil and sauté the minced garlic until fragrant.
