PREPARATION
Preheat your sheet pan in the oven to 400°F.
Dice the sweet potato into small cubes and slice the red bell pepper into strips. Toss them with a small drizzle of olive oil (optional), salt, and pepper.
Place the diced sweet potato and bell pepper onto the preheated sheet pan. Roast in the oven for about 20 minutes until tender and slightly caramelized.
Meanwhile, slice the turkey sausage into 1/2-inch pieces.
