1 medium Sweet Potato
1 large Egg
2 Egg Whites

1/4 medium Yellow Onion
1 cup Spinach
1 tsp Olive Oil
PREPARATION
Preheat your oven to 400°F.
Dice the sweet potato into 1/2-inch cubes, and toss with olive oil, salt, and pepper. Spread them out on a baking sheet.
Roast the sweet potato for 20-25 minutes until tender and slightly crispy, stirring halfway through.
While the sweet potatoes roast, chop the bacon into bite-sized pieces and rough chop the turkey sausage.
Sauté the bacon in a large skillet over medium heat until crispy. Remove and set aside, leaving the rendered fat in the skillet.
